Materials
Spaghetti 1 serving 90g
Sterile eggs 1 piece 60g
Pecorino 30g
Italian cured pork cheek Guanciale 40g
Black pepper Season generously
Noodle cooking water 1.5 liters of water + 1 teaspoon of salt
Slice the meat first, then cut it into strips, put it into a cold pan, and stir-fry over the lowest heat to remove the fat.

Boil water and grate cheese.

When the water is boiling, cook the pasta. Follow the time indicated on the package, minus 1 minute.

To make the sauce, add eggs to the cheese.

Stir well and add half the black pepper.

Guanciale can be cooked with a little fat or fried until it is crispy and all the fat is squeezed out.

Finally, add the other half of the black pepper and stir-fry until fragrant.

After the meat is stir-fried, take out half of the meat and add a spoonful of starch water used to cook noodles and emulsify it with lard.

When the pasta is one minute away from being cooked, add it to the milk and cook until it is cooked to the desired degree of doneness.

If the pot becomes dry during the process, slowly add the cooking water to allow the pasta to slowly absorb the water and release the starch.

The most important step is to never put the egg sauce into a hot pan, or it will turn into scrambled eggs. Two methods:

① Turn off the heat after cooking, let it cool for 1 minute, then add the egg sauce and mix well.

② Pour the cooked noodles directly into the bowl with the egg sauce and mix well.

It should still be watery after mixing. Return to the pot, turn on the lowest heat, and continue stirring the bottom of the pot. Turn off the heat when the egg liquid becomes a thick sauce and let the sauce coat the noodles.

After serving, place the meat that you took out in advance on the top and rub some black pepper on it.

Pasta alla Carbonara means "carbon black pasta" in the Italian context, and the "carbon" here refers to the large amount of black pepper on the surface.

Calories & nutritional composition, for reference only (I can't find Guanciale, Pancetta's composition is exactly the same).

If you don't see it, you might think it's a cheat meal, but it's actually a classic Mediterranean diet with plenty of protein, very filling!
