【Ingredients for mutton stew:】
onion 1 large
tomato 3 small
Tomato sauce 1 tablespoon
Amomum villosum 1

The ingredients for marinating mutton are ready.
Chop cumin powder, coriander seed powder, turmeric powder, chili powder, curry powder, salt, garlic and ginger. I used ginger powder.
Wash the mutton, drain it and pour in the marinade.
Add yogurt and mix well.
Marinate at room temperature for 1 hour.
Prepare tomatoes and onions.
Chop all into small pieces.
Pour a small bowl of olive oil in China. Use more oil to fry onions, as onions contain sugar and are easy to get stuck to the bottom.
Add chopped onion and sauté over medium heat.
Fry until transparent and slightly yellow. The onions at this time still have a lot of sweetness and are suitable for making Japanese curry chicken. It will be more delicious when cooking lamb if it is a little more caramelized.
Stir-fry until slightly charred, then add bay leaves, cinnamon and cardamom and stir-fry for a few more times.
Add chopped tomatoes and stir-fry until fragrant.
Pour in tomato sauce and stir fry.
Pour in the marinated lamb.
Stir-fry until fragrant.
Add boiling water until just enough to cover the mutton, bring to a boil and simmer over low heat with the lid on for 1-1.5 hours.
Open the lid and taste the saltiness. If it tastes bland, add a little salt and cook over high heat until the moisture is dried up.

Adding yogurt, onions and tomatoes will make it thick and rich. If you like potatoes and carrots, you can add some at the end and cook for 15 minutes.
