There is a specific reason not to use brown rice. I forget exactly what it is lol. Probably not enough starch. I was taught knf is a specific process much like a symphony. My teacher warned that the microbe collection may not be as diverse. In fact maybe because of the prebiotics in brown rice might suppress the diversity.
