8 hour slow roast brisket on the Green Egg with home made beer and my friends Fabio and Ben!

Today was the day I have been looking forward to for a while.

Our first attempt of making a real brisket on the green egg.

Last night my friend Fabio (@fabrews) and I went to butcher Schell to pick up the meat.

We marinated it overnight.

This morning after making my vlog I went to my grill to start the session.

It was going to be a long wait! But o man! What a great attempt it turned out to be.

I filled the Green Egg fully with enough coals for 8 hours and lit them with 3 fire starters. After they went out I put in the convector plate and closed the green egg. I regulated the temp until it was a stable 110 degrees Celcius.

Then I put the meat on.

Fabio arrived around an hour later with a huge confession. He trimmed to much of the fat off. It was a mistake. Luckily I saved the fat and it was in the fridge. We opted for a very pragmatic option of just layering the fat back on.

Half way through the slow roast we got hungry and Ben had arrived to so we fired up my old grill and prepared part of the back-up meat.

After 4 hours we took the brisket of the grill and wrapped it in baking paper. According to our studies online this would preserve moisture in the meat. We then put it back on for another 4 hours.

After all that time I could finally get the meat of the grill and I let it rest for 45 minutes. I unwrapped it and it looked like this. We cut into it and juice just poured out. It was awesome!

To give a better of how moist the meat was I made this small video.



We served the brisket on a simple bun with a home-made coleslaw and we had one of those special beers Fabio and I brewed not long ago.

For a first try I was very happy with the result.

Yes, there is a lot of room for improvement no doubt. But this is now the base line.

It has made me pretty curious what a brisket must taste like made by one of those pit-masters with decades of experience you seen in cooking shows.

It must be out of this world.

The rest of the night we talked and had some more beers and enjoyed each-others company.

The night was everything I could have hoped for!

It was fantastic!

I gotta tell ya, that brisket looks amazing! Looks as good as most brisket I've seen here in Austin. Great first effort man! I love it that you had backup meat in the fridge to cook while you were waiting for the brisket to finish :D

Owk this brisket looks really yummy but to have to wait for 8hours????? That's what I dunno of I can do so I might just have to go get an already made brisket. Sure it's gonna be more expensive coz of the stress in making it but I rather buy it than keep looking at something this yummy for 8hours to get ready...lolzz

The green egg is pretty easy to keep stable. Normally you would only have to open it once to wrap the meat and that's it. You can do all the daily chores while it is cooking no need to watch it :)

Oh yeah, finally came the hour when we saw the famous green egg and this meat that was marinated since yesterday! The result is excellent and since I'm also a big fan of roast meat, I should note that the meat after frying looks simply delicious and I'm sure it's delicious! Well, with delicious beers and in a good company, the more it's nice to eat! Thank you Mark.

Light-bodied with a fruity aroma, that's very much to my taste. I guess a bit of a home-grown stuff would also make a good addition to your evening :-)

A great attempt and you have better patience then Sam would have. He's all for slow cooking too, but by hour 3 he would think that would be enough and start pigging in. Yet, he wouldn't get the moisture on that meat as your video shows. So, juicy!
Nice touch with the homemade beer that you brewed. Sometimes you just need a great Saturday night in with the lads! Meat, boozes and banter.

My friend makes 8-10 large briskets each year for a party he hosts. He fires up 2 grills and does a couple in the stove. The grilled ones are always my favorite. This party is coming up in a few weeks and now I can't wait!!! That looks SO good.

for being the first time it came out pretty good. I notice you started in the green egg and then back into old oven. May I ask what temperature did you set the old grill to cook the rest of the way in the baking wrap?

No, the old grill we used to grill some other meat. The brisket was made only on the green egg.

Food looks great but took quite a lot of work it seems.

Looks great, It is so soft like it was boiled for god knows how long.

Ah Exyle that little video was too much for me. Now I have even more motivation to save up for a steempowered green egg because damn that meat looks fine.

jajaja It must be delicious! The whole day for a nice steak! here in Catalonia you can do a nice entrecot from Girona in 5 min and it is awesome! The touch of your own draft beer is nice, here we usually go for wine, but I will consider a craft beer for the next "friends barbecue". Stay safe! by the way this green egg is something else, never seen one of those here, will do some research...

Aw man /hide about that fat layer, but we will get it right the next time. At least we got a great smoke ring. The taste was great too and as usual it was another great BBG. I have seen plenty of video's about Texas brisket and it's super pro. Would love to try it one day.

I'm glad your experiment was successful, it would have been sad waiting 8 hours for the meat to cook and then it being uneatable :)
Hope the vegetables will have more of a presence next time :P

The green egg back in action looks like a great get together with friends @exyle and a good first attempt with the meat looks a little too juicy and too much fat for me but its something I would need to try it does look yummy in the bun, beers cheers!

The end result is worth the time you put in. After a night in the marinade and the cooking for quiet a long time, this must be good. Did you finish all the meat ? It is mouthwatering to See the meat on the green egg in winter.

Wow meat and beer, this is exactly what I used to chill with my friends the difference is that we don't make it ourselves.

when I read the title I thought "green egg" must be a type of delicacy, then I read further and realized it was a cooker/barbeque!. The brisket looks amazing; good job I have already eaten or I would be very hungry looking at it!

Hmmmmmhhh 👃 ... worth the wait and effort @exyle how I wish I could taste it as well, looks perfectly done and delicious...and because of that I'll take my lunch... sad to say i need to choose whatever it is that they serve in our pantry, in short I am not at home to cook food that I like...office life!

I personally cannot swallow barbecued meat. I only like it when meat is cooked with rice and vegetables. In barbecued meat small rawness of the flesh remain. This makes it difficult to digest it.

Ah, here is the brisket I saw in the other post. :-) You are right: sandwiches with coleslaw are the best. I do the same. Nothing is better than that juice together with meat. 👍
