Ingredients
Chicken breasts, thighs or drumsticks
Water
Potatoes
Peeled pumpkin
Carrot
Vegetable oil
Salt
Ground black pepper
Cooking
Place the chicken in a saucepan and cover with cold water. Bring to a boil, reduce heat to low and simmer for 35–45 minutes.
Remove the cooked chicken from the broth, cool, remove from the bones and cut into small pieces.
Chop the potatoes, pumpkin and carrots in medium pieces.
Place the vegetables in the stock. Bring to a boil again and simmer over low heat for about 20-25 minutes, until vegetables are tender.
Chop the onion and fry in a pan with oil for 5-7 minutes. Add to soup and boil for 1–2 minutes.
Place the chicken back in the pot, add salt and pepper. When the soup boils again, remove from heat.
Your delicious pumpkin soup with chicken is ready.
